Shepherd's Pie



ONE
1 T coconut oil
1 onion, chopped
2 carrots, diced
4 cloves garlic, pressed

TWO
1lb ground turkey
salt and pepper, to taste

THREE
2 T tomato paste
1 t coconut aminos
1 t rosemary
1/2t thyme
1/4 cup fresh minced parsley (optional)

MASHED POTATOES
2 medium sweet potatoes, peeled, cubed, and boiled in water until soft
1/4 cup almond milk (or more, for consistency)
salt, to taste

Preheat the oven to 400F. In a large pan, saute ONE until veggies start to soften. Add TWO and cook until meat is no longer pink. Add THREE and cook until most of the liquid has evaporated, about 15 minutes. Transfer to a lightly oiled baking dish.
Once the sweet potatoes are soft, mash them with the milk and salt. Pour evenly on the meat mixture, making waves with a fork, and sprinkle with paprika. Bake for 40 minutes.
