(Makes 4)
7 egg whites and 1 whole egg
1 cup pumpkin puree
1 t vanilla
2 t cinnamon
1 t pumpkin spice (optional)
1/2 t baking soda
Coconut oil to cook
In a bowl, whisk ONE. Add TWO and mix well. Ina pan, melt the coconut oil. Spoon some of the mix (batter is thin, so it will spread a lot). Flip to cook on both sides. Serve with pure maple syrup.
